quick, easy and nutrious side dish! Mashed potatoes…surprise!

In my unending journey to make healthy meals for our family, I tried something new.  I was so pleasantly surprised but the best reaction came from the kidlets!

The simple, quick and nutrious side dish I made required 5 ingriedients:

One head organic cauliflower, cut down to florets

Four organic red potatoes, peeled and halved

One organic Gala apple, peeled, cored and diced

2 TBS organic, unsalted butter

1/3 plus 1 TBS organic Fat Free Milk-(I imagine you could substitute chicken or veggie stock here if consuming milk is an issue)

Kosher salt and fresh cracked pepper-to taste

I steamed the cauliflower florets first, and then re- used that water to cover and then boil the red potatoes and apple. Potatoes are ready when they can be easily pierced with a fork. The apple should be ready at the same time.

Combine the cauliflower, potatoes and apple in a large sauce-pot. Blend with hand mixer, adding 1/3 cup milk. Heat under low heat, stirring occasionally and add butter. I sprinkled with kosher salt and cracked pepper and then blended everything once again. After heated thoroughly I added the last 1 TBS of milk to ensure a smooth texture.

Serve hot. Delish! The apple gives this dish an added surprise flavor, I might even add one more next time. My kids ate more than two servings of this dish!

Cauliflower (cabbage family) is a great source of Vitamin C and K, and is also a good source of potassium, fiber, phosphorus and B vitamins.

Red Potatoes are high in fiber, low in salt, and provide an excellent source of Vitamin C.

I shared this with Big B who is in the midst of a major nutrition lesson at Pre-school. His reply? “Oh, lots of Vitamin C? then we will not get scurvy!” HRRR? I am still cracking up at this!

 

 

 

Review: Maclaren Diaper Bag

 

The Maclaren Park Diaper Bag is my new favorite tote. I stopped carrying a diaper bag about a two months ago when I returned my sister’s bag to her for the birth of “new” baby. I have owned several diaper bags and have’t loved any of them! I coveted hers and although it was better than the three I had, it still wasn’t great. (sorry L!) I have been throwing my things in multiple bags and feeling completely disorganized, not good for a mommy on the go!

Maclaren Park Bag

The Maclaren Park Diaper bag not only looks great but is a perfect combination of function and comfort. I love the long, thick handles that fit comfortably over my heavy winter coat. I love the fashionable indigo denim that makes this bag look fun, and not at all like a “diaper” bag. I will happily use it as a tote when I’m no longer packing for three!

The main compartment features large storage, two side pockets, perfect for cups!, and three smaller sleeve pockets to hold your phone, wipes, and diapers. There is a large zipper pocket to house your personal items, and an outside covered pocket for those things you need quick access to. It has a large zipper across the top to hold everything inside the bag, but even if you are in a rush, and don’t zip it, (AHem!) the fact that the bag is so deep helps to contain almost everything anyway. I love the little “feet” that keeps my bag from touching the floor (eww!), I wipe them off when I return home and feel comfortable placing the bag down in the playroom. The Park bag really is “smart and spacious for all types of outings”. It is lightweight and holds everything you would need for a day out and about. The only thing I would add would be a ring to attach my keys.

On a recent outing I was able to fit the following into the main compartment (without removing the included wipeable, removable albeit small, changing pad) of my Maclaren Park Diaper Bag:

  • three cloth diapers (Bum Genius organic AIO)
  • six cloth wipes in a wipe container
  • two SIGG bottles
  • two sets of winter jammies, including undershirts!
  • two pairs of socks
  • a cloth bib
  • a full change of clothes for lil bee, size 2T
  • a small rag doll
  • a receiving blanket
  • 2 pairs of children’s mittens
  • a pair of women’s (mine!) gloves
  • a small makeup bag
  • my overstuffed wallet

Winter Reads, Two Winter Books

With the very first flurries falling today, I was inspired to share our two new favorite winter books. We began reading them to celebrate the winter solstice, and they have become a regular part of our reading routine.

Our first favorite is Making a Friend by Alison McGhee. A little boy talks about his experience with his new, albeit short lived friend, the snowman. Written with all of the wonder of a little one’s mind and innocence.

This super sweet story is written so poetically. I love reading it aloud and seeing how the magic of the words captivates my little audience. The illustrations are simple yet capture the story perfectly without interfering with it. It brings tears to my eyes and the children don’t move a muscle while it is being read.

 

 

 

Our second favorite is Red Sled by Lita Judge. Written solely in onomatopoeia, this books is as fun to read as it is to listen to. The children love to add their own dialogue and narrate each page in a new way every day.

The cheery animals and classic, bright blue winter scenes make this story special yet familiar.

New Year’s Resolutions, 2012 the kids

A fellow blogger, Emily, gave me a great idea and a list of questions to ask my young children. She asked her young son the same questions and I adored the answers. Of course, comprehending such questions was a bit of a challenge for little bee (2) but once I helped her along, she was happy to be “interviewed” and even sang happily, “More questions, Mommy!” My experience was very different with Big B (3.5). He is super thoughtful and really took his time to answer me and even asked for clarifications when he wasn’t sure what I was asking. He seemed to be so “filled up” that I would ask him such questions.

Thank you Emily as this was inspiring, enlightening, sweet, and I moment I will not soon forget. I am glad you encouraged me (us) to record it and link up. 1. What one place do you want to visit?

Big B: Kid’s Museum! I love it there because we can play on everything and we haven’t been there in a long time!

Little Bee: Go see Wy Wy’s at his house! (this is her similarly aged cousin!)

2. What one thing do you really want to do?

Big B: Practice cutting! or Read a bedtime story by myself. (He couldn’t decide which!)

Little Bee: Swimming in the pool, I do it myself!

3. What class or skill would you like to take/learn?

Big B: I think I would like to take Karate. (news to me!) I like to excercise and they let you wear a costume. (I had to hold back my laughter-children are so pure! LOVE!)

Little Bee: (she repeated her answer to #2, she really likes to swim!)

4. If you could help anyone, who would it be?

Big B: I help new friends at school so they know what the rules are and so they can be happy and not shy. 

Little Bee: Help mommy with the dishwasher. Help baby Harriet from when she is crying.

New Year’s Resolutions, 2012

I like New Year’s Resolutions. I like a challenge and try to make resolutions that I will keep, and that will truly help me to grow. I am quite pragmatic and try to leave a margin of “error” in terms of reaching my goals…think, “Make healthier choices” as opposed to,  ”Eat less junk food”. Some may call it semantics, but it’s the way I work and it helps me to reach the goals I make.

I have made a short list (of course, I am a list maker after all) and I think sharing it here will help strengthen my committment.

  1. Play like a “kid” more often. This way a phrase a learned from a fellow blogger and I simply adore it. I keep it in my head as a little mantra and it helps to keep things in perspective and be in the “moment”.
  2. Get outside for at least fifteen minutes every day. So far, so good with this one! I have proper cold weather gear, as do the kidlets so no excuses this year!
  3. Surround myself with people that have similar values and goals. 2011 dealt some pretty ugly cards my way, having a few close, supportive friends and family members near, made all difference and allowed me the clarity, strength and perseverance I needed.
  4. Ask for help, and accept it. (I was afraid to list this one as #1 although this is where it really should be.)
  5. Spend twenty minutes on myself every day to make myself feel good. Whether it be to make a phone call, stretch my limbs, read for a laugh, paint my toes or take a cat nap, I am committed to devoting some time to me, every day. I know this will do wonders for my soul, my patience, my overall well being.
  6. Love more, criticize less, and quell quick judgements. Tall order, but I am so much happier and content when I respect this. Being negative takes a lot out of a person.
