In my unending journey to make healthy meals for our family, I tried something new. I was so pleasantly surprised but the best reaction came from the kidlets!
The simple, quick and nutrious side dish I made required 5 ingriedients:
One head organic cauliflower, cut down to florets
Four organic red potatoes, peeled and halved
One organic Gala apple, peeled, cored and diced
2 TBS organic, unsalted butter
1/3 plus 1 TBS organic Fat Free Milk-(I imagine you could substitute chicken or veggie stock here if consuming milk is an issue)
Kosher salt and fresh cracked pepper-to taste
I steamed the cauliflower florets first, and then re- used that water to cover and then boil the red potatoes and apple. Potatoes are ready when they can be easily pierced with a fork. The apple should be ready at the same time.
Combine the cauliflower, potatoes and apple in a large sauce-pot. Blend with hand mixer, adding 1/3 cup milk. Heat under low heat, stirring occasionally and add butter. I sprinkled with kosher salt and cracked pepper and then blended everything once again. After heated thoroughly I added the last 1 TBS of milk to ensure a smooth texture.
Serve hot. Delish! The apple gives this dish an added surprise flavor, I might even add one more next time. My kids ate more than two servings of this dish!
Cauliflower (cabbage family) is a great source of Vitamin C and K, and is also a good source of potassium, fiber, phosphorus and B vitamins.
Red Potatoes are high in fiber, low in salt, and provide an excellent source of Vitamin C.
I shared this with Big B who is in the midst of a major nutrition lesson at Pre-school. His reply? “Oh, lots of Vitamin C? then we will not get scurvy!” HRRR? I am still cracking up at this!
